Domaine La Lauzeta produces some fabulous organic wines from St Chinian. Established in 2015 by Tom Hills, with winemaker Florian Bruneau, this was a true ‘Garagista’ wine maker which now has a small winery in the village of Saint-Nazaire-de-Ladarez. Tom bought two old vineyards to create Domaine La Lauzeta, and immediately began organic conversion. He has quickly gained recognition, and his wines are listed on 17 Michelin starred restaurants in France.
The Fantazia is one of three small batch, single varietal reds. made by taking apart three old barrels and filling them with destemmed whole grapes, to encourage an intracellular fermentation, Beaujolais style, rather than traditional grape-crushing. This has helped create three wines soft and rounded wines with minimal tannins, all approachable in their youth. The Syrah is the deepest of the three, and we like it best at ambient temperature.
Intense aromas of blackberries and cracked black pepper here, with rich black fruit echoed on the palate with silky tannins and balancing acidity. Deep and rich and satisfying.
