The Chateau de Lascaux domain is located in the heart of Pic Saint-Loup, the iconic mountain at the north of Languedoc. This majestic terroir, which produces fine and elegant wines, has original and unique characteristics. Although Pic Saint-Loup is located at 20 kilometres from the Mediterranean sea, this wine region has an average altitude of 150 meters, on the first foothills of the Cévennes.
The tasting cellar is a former priory from the 12th century. It once depended of the Abbey of Vignogoul, in Pignan. It is a unique place, as a witness of the time that passes by.
The vineyard has been certified organic since 2009 and biodynamic since 2018. Special importance is placed on the rich natural environment that surrounds the estate. By using composts and preparations made from medicinal plants, silica, and cow manure, they work every day to promote the fertility and biodiversity of the soils in order to reveal the full potential and expression of the Pic Saint-Loup terroir in their wines.
The Carra is a blend of 60% Syrah, 30% Grenache, 10% Mourvèdre.
The vines from which the Carra cuvée originates are planted on a stony soil composed of Quaternary limestone scree (Jurassic limestone, harder and older), producing fine and elegant wines, rich in the characteristics of this unique terroir.
Manual and mechanical harvesting depending on the plots. Destemmed harvest. Cold pre-fermentation maceration for 3 to 4 days in concrete tanks. Indigenous yeasts. Gentle extraction adjusted according to juice tastings. Temperature control during fermentation, followed by a gradual increase in temperature during the final maceration. Aged in concrete tanks for a minimum of 10 months.
The Chateau de Lascaux, Carra has a deep, red colour with purple highlights. It has a bright, very aromatic nose, which develops with notes of liquorice and blackcurrant. In the mouth the wine has a beautiful volume and expression. The tannins are supple and melted. Notes of red fruits, blackberries, black olive. A peppery finish.
