Domaine Jean Collet et Fils own some 40 hectares which they farm mainly organically, and the rest is in organic conversion. Romain Collet represents the new generation in charge of the Domaine. The Collets are fortunate in owning some of the finest land in Chablis.
The village Chablis comes from sites scattered around the town itself. Since 1999, an experimental parcel of organic Chablis has been maintained, Collet being one of the first in the region to follow the concept of sustainable viticulture.
With vines from this vintage are averaging around 91 years old, this Chablis is wonderfully balanced and very attractive, with remarkable freshness and minerality that marks it out as a classic. This is vibrant on the nose, with aromas of apple, lemon zest and white flowers. On the palate, expect to pick up ripe fruit, wet stone with a touch of saline on a long mineral finish.
