In 2009 Stefano established a new business called ‘The Wine People’ in partnership with Frenchman, Philippe Marx, and Dutchman Peter Kosten. They have combined their skill and experience to bring affordable good value wines from across Italy, with the help of renowned Italian winemaker Stefano Chioccioli who makes all the wines.
Appassimento refers to a process for taking grapes at perfect maturity, and slightly drying them. This is more commonly seen in wines like Amarone and Valpolicella Ripasso. The grapes are left to dry for about 12 days and thus ensuring a natural drying process. They lose about 25-30% of their weight. Such a process allows the concentration of flavours and a natural sweetness of the grapes.
The Preciso has a complex nose with aromas of cherries, raspberries and currants. Oak ageing adds a pleasant toasty, spicy character. The palate is full bodied with flavours of dried fruit, slight raisin character, plums, damsons, garrigue and a hint of spice. The finish is rich and full with good, sweet fruit flavours in an excellent balance.
