Astrid Hubert has 15 hectares in the heart of the Pays d’Auge. She uses 15 varieties of apples, together with 5% of pears, and never sprays her crop.
The cider is left in foudres for 1 year before distillation, the Calvados then being matured in long old oak barrels. She only makes single vintage Calvados which is of sublime quality. Hubert creates some superb farm-produced Calvados in the Pay d’Auge les Vergers de la Moriniere county, and this 2009 vintage is no exception. Fruit from the 200-year-old tree next to the brand’s cellar was used in this edition of single-vintage expression.
Bursting with apples, pears and rich vanilla. Baking spice and a touch of toasty oak bring depth.
